Mine are all Hemipterans of course:

1. Fulgora laternaria
2. Cathedra serrata
3. Bocydium globulare

While I don't currently collect insects as a regular matter of course I second both the giraffe weevil and the ball bearer leafhopper (Bocydium globulare) as ones that would be most intriguing to see made, and would like to add one Baphomet moth (Creatonotos gangis).

And as an honorable mention, a depiction of any small insect being trapped in a sundew plant

...Also there are some absolutely insane looking caterpillars I doubt have been made into figures yet

Phymateus saxosus (Rainbow Milkweed Locust)
Eurycantha calcarata (Thorny Devil Walkingstick)

All lifesize, of course, and the list goes on and on.  The Birdwing Butterflies would all be exquisite as well.
