Now this is a curious topic...
I guess in the moment mine would be:

Any abyssal sea-life (but especially something rare or unique in toy form like a double-barbed angler or a black swallower)

Cock-of-the-rock bird (one of my favorite tropical birds and one that I don't think has ever been made into a toy despite how iconic and colorful it is)

Any weird plants (especially something with little or no existing toy figures like a sundew or a hydnora plant)

I'd buy anything deep sea (other than another giant squid). I would absolutely love any caprimulgiform - I think there's only been one ever made: Yowies tawny frogmouth from the 90's. The armored bush cricket is cool too. Reminds me of a weta. I'd throw in a vote for a mole cricket.
