Fish Recommendations? (Non-shark)

I have alot of cetaceans, sharks, & rays. Some turtles, a Giant Squid, octopus, and jellyfish.

But as far as standard fish go my collection is quite scarce. I have:
-Clownfish
-Blue Tang
-Moorish Idol
-Sun fish
-Goliath Grouper
-Sailfish
-Red-bellied Piranha

Criteria
- I prefer oceanic fish first. Perhaps a tuna, other coral fish, etc.
- Size does matter. I understand all figures cannot be to scale that being said I don't want them too large unless the size is justified. Looking at 1"—2.5" figures.

Easily available, non-Japanese, extant species of ray-finned fish figurines that fits into your extremely wide scale range (from almost lifesize clownfish to the Safari sunfish) and size range (as big as the enormous Safari goliath grouper), and that you don't have, could include:

-CollectA boxfish (if you don't mind the fact of being a young one)
-Safari Pelagic fish toob (Many are sharks, but they also include very nice sailfish, swordfish, yellowfin tuna and a sardine school)
-Safari Coral reef toob (many non-fishes and two of the fishes you already have, but at least they have a seahorse, a blue parrotfish and the most interesting, a flame angelfish)
-Safari green moray eel (there are both IC version and normal size)
-Safari IC frogfish
-Safari IC salmon (you also can considere the Safari life cycle of a salmon for smaller salmon)
-Safari IC flying fish
-Safari IC largemouth bass
-Safari IC koi carp
-Safari IC porcupinefish
-Safari IC weedy sea dragon
(all the IC line are ginormous animals, but as you have the grouper from this line, I've included the most interesting ones)
-Mojo Fun humphead wrasse (sold as "blue groper")
-Maia & Borges series of coral reef fishes (banded butterflyfish, reticulated butterflyfish, threadfin butterflyfish, raccoon butterflyfish and royal angelfish)

if I understand you correctly, you want smaller species?

If you are OK with tracking down Japanese figures that might require some assembly, start with the coral reef sets by Yujin and Colorata. Kaiyodo made many as well, especially for the Aquatales line.

The aforementioned Safari Pelagic Fishes TOOB is nice; Safari made additional tunes, as did K&M International. Play Visions also has some sets (may be hard to find, but show up on eBay).

Almost all of my non-shark fish are 'small' and from the various options I outline above.

As a fish collector, here are my suggestions but they are expensive: kaiyodo aquarium sets(lots of unique species not made anywhere else), colorata coral fish, saltwater fish and deepsea fish box. My favourites will be both Yujin saltwater fish in color set: set 1 contains tropical reef fish, mostly influenced by finding Nemo and set 2 is mostly fish eaten around Japan. For cheaper alternatives, collectA's boxfish or Papo's clownfish, surgeonfish and moorish idol.

Here's a pic of the current fish

I do plan on getting the CollectA Boxfish and maybe the Safari Ltd. Moray Eel, but not sure if the 9" long is the "Incredible Creature" variant cause all else I see are the mini 192pc. Eels.

Uninterested in prehistoric, but the Coelacanth is intriguing.

There are smaller versions of the Safari green moray in the Wild Safari Sealife line. The older model has a wire and is bendable; the newer one (sorry don't have dates handy) is solid piece. I suggest the latter (I got mine in 2019 so may not be hard to track down)

Went ahead and ordered the CollectA Boxfish per recommendation.

Not sure if I'll be collecting any TOOBs.

You might want to look into Toy Fish Factory. Most of their sets consist of freshwater fishes but the Gulf Coast set is entirely marine.
